Bavarian Potato Soup

You can substitute any vegetable for the potato, just cook it a little bit first.

  • 4 slices of bacon, chopped
  • 1 small onion, chopped
  • 2 celery stalks with leaves, finely chopped
  • 2 T flour
  • 4 C chicken broth
  • 3 large baking potatoes, cooked and cooled
  • 2 egg yolks
  • 1 C sour cream or Greek yogurt

Sauté the bacon and vegetables until softened.  Stir in flour and add the broth slowly.  Halve the potatoes, scoop out the meat, and break up into the soup.  Simmer, covered, 30-40 minutes.  Combine egg yolks with the sour cream; add to the soup.  Simmer for a few minutes and serve.
